WATCH ME π Make Slow Cooker Chicken Stew
Hey farm friends ... get excited! We're making one of my favorite dishes today and it is SO easy. It's slow cooker chicken with some delicious vegetables.
This is the ultimate in delicious comfort food, but it's light enough for summer! Your body will feel SO nourished.
I'm starting with one of our beautiful chickens that we just butchered last Saturday. It is a pasture-raised, family-loved, farm-fresh chicken.
If you missed out on getting one of those chickens (or stocking your freezer) last week, we have another pick-up date on Sunday, August 16.
Then WATCH ME make this delightful dish.
Slow Cooker Chicken Stew
1 Wind Wolf Farm whole chicken
4 carrots, cut into chunks
4 red potatoes, skins on, cut into cubes
1 yellow onion, sliced
4 cloves garlic (or more), minced
2 tsp. Jane's Krazy Mixed Up Salt, or your favorite seasoning
1 c. fresh basil, torn or sliced
Combine everything in the slow cooker and cook on low until the chicken has reach 165 degrees. Let it rest then add as much chicken as you want back in with the vegetables and juices. Freeze the rest of the chicken for chicken salads, burrito bowls, tacos, wraps, β¦ π
NOTE: You can adjust this recipe to suit the number of people you're serving. Just one person ... just add one potato, one carrot, 1/4 c. sliced onion, 1 clove minced garlic. If you're serving an army, get multiple crock pots and a mountain of potatoes and carrots. You get the idea π
